Polish Red Cabbage Salad

Great tasting dishes don’t have to be complicated. This beautiful red salad makes a great side dish, and is served in homes all over Poland.


  • 5 cups shredded red cabbage
  • 1/2 teaspoon salt
  • 1 apple, cored and shredded
  • 1/2 small onion, minced
  • Juice of 1/2 lemon
  • 1 Tablespoon red wine vinegar
  • 1 Tablespoon sugar
  • 1 Tablespoons vegetable oil


Use a mandolin or food processor to thinly shred the cabbage, then place in a medium sized mixing bowl and sprinkle with salt. Massage the cabbage with your hands for several minutes to soften it. Shred the apple and add to the bowl, along with the minced onion, lemon juice, red wine vinegar and vegetable oil. Stir the ingredients together, cover and refrigerate.

The sweet and savory flavor of this salad improves as the ingredients marinate for several hours.
